Moms are always crunched for time with little ones. Breakfast is usually not my favorite meal to make. I like having something that is my go to at one point in the week so I do not have to think about what I will be feeding hungry little humans for breakfast at least once a week.
Granola is one of those easy things that fills up the kids and it’s really easy to make in a huge batch that will last you a while. So here is my favorite granola recipe that I hope will make your mornings a lot more smoother.
What you need:
8 cups of rolled oats
2 cups of extras (chopped almonds, pumpkin seeds, dried fruit)
1.5 cups of fat (coconut oil, olive oil)
2 cups of sweetener (honey, maple syrup, brown sugar)
1 tbsp cinnamon
2 tsp vanilla extract
You will also need a Casserole Dish to bake in.
If you are using coconut oil you will have to melt it as well.
Instructions
Preheat oven to 350 F
Mix the oats with the cinnamon and your extras (if using dried fruit put it in after the baking is done so it doesn’t burn the fruit)
Pour the oil choice on the top and mix well
Pour the vanilla in
Put the sweetener in and mix really well
Put in the oven and bake for a total of 45 min taking it out every 15 to stir with a fork. If you want it crispier then bake for 1hr but still stir every 15 min.
Take out and let cool completely so it does not become soggy. I leave it on the counter usually out of the reach of children and stir it with a fork once in a while until it’s completely cooled down. Then I transfer it to Mason Jars once done.
I noticed that granola really fills up the kiddos in the morning and most stores it’s super expensive for large portions. Rolled oats are the cheaper food to buy in stores for bulk so it’s worth making your own granola. It will take some rounds of making granola to see what your own family likes, our family really enjoys honey and almond mix with ours.
